Description: | This 12-week (360 hour) program is designed to provide students with the knowledge and skills required to work as camp cooks in a variety of industrial or institutional settings. The program structure is based on the knowledge and skill competencies outlined in the NWT Camp Cook Occupational Standards. The program content focuses on professionalism, nutrition, safety, sanitation, safe food storage, and the preparation of a vast variety of foods typically consumed in a camp setting. These include soups, sauces, meat, poultry, fish, seafood, vegetables, fruits, pastas, grains, salads, sandwiches, appetizers, breakfast foods and a variety of baked goods. |
